Instructions

  1. Brew Espresso: Brew 3 tablespoons of espresso coffee and allow it to cool completely before using it in the mixture.
  2. Crush Ladyfingers: In a blender or food processor, blitz the savoiardi biscuits until they reach a fine powder consistency, similar to cookie crumbs.
  3. Prepare Cream Mixture: In a mixing bowl, combine the mascarpone cheese and sifted powdered sugar. Add the cooled espresso coffee and mix until smooth to create a creamy batter.
  4. Combine Ingredients: Add the crushed ladyfingers to the mascarpone mixture and gently fold using a rubber spatula until fully incorporated, forming a thick batter-like consistency.
  5. Shape Truffles: Using a teaspoon, scoop out portions of the mixture and roll them between your palms to form smooth balls. Place each ball on a plate. You should get about 10 truffles.
  6. Chill Truffles: Refrigerate the truffle balls for 1 hour to set. For a firmer texture, chill longer if desired.
  7. Coat with Cacao: Place cacao powder in a small bowl. Roll each truffle in the cacao powder until evenly coated.
