Description

These Sloppy Joe Bowls feature tender roasted sweet potatoes and a savory, saucy ground beef mixture seasoned with a blend of spices and tangy ketchup. Perfect for a hearty, comforting meal that's easy to prepare and assemble.

Ingredients

Scale

Roasted Sweet Potatoes

  • 2 medium sweet potatoes cut into 1/2 inch cubes (about 3 cups)
  • 2 tablespoons avocado oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt or to taste
  • Freshly ground black pepper to taste

Sloppy Joe Meat

  • 1 pound lean ground beef
  • 1/2 cup diced yellow onion
  • 8 ounces tomato sauce
  • 1/2 cup ketchup
  • 1 tablespoon honey
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon chili powder
  • 1 teaspoon dried mustard
  • 1/4 teaspoon celery seed
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt or to taste
  • Freshly ground black pepper to taste

Other Ingredients

  • Dill pickle slices
  • Sliced red onion

Instructions

  1. Preheat and prepare sweet potatoes: Preheat your oven to 425° F and line a baking sheet with foil or parchment paper. Place the sweet potato cubes on the sheet pan and drizzle with avocado oil, chili powder, garlic powder, kosher salt, and freshly ground black pepper. Toss with your hands to coat the sweet potatoes evenly.
  2. Roast sweet potatoes: Roast in the oven for 30 minutes, tossing the sweet potatoes halfway through cooking to ensure even roasting, until they are tender and slightly caramelized.
  3. Cook the beef and onions: While the sweet potatoes roast, heat a large skillet over medium-high heat. Drizzle a little oil into the skillet, then add the ground beef and diced yellow onion. Crumble and cook the beef until no longer pink and the onions are tender.
  4. Add spices and sauce to meat: Stir in chili powder, dried mustard, celery seed, garlic powder, kosher salt, and freshly ground black pepper. Pour in tomato sauce, ketchup, Worcestershire sauce, and honey. Mix everything thoroughly to coat the beef mixture.
  5. Simmer the sloppy joe mixture: Reduce heat to medium-low and simmer the meat mixture for 15 minutes, stirring occasionally, until the sauce thickens and flavors meld.
  6. Assemble the bowls: Divide the roasted sweet potatoes and the sloppy joe meat evenly among four bowls. Top each bowl with dill pickle slices and sliced red onion or your preferred toppings. Serve immediately while warm.

Notes

  • For a spicier kick, add a pinch of cayenne pepper or hot sauce to the meat mixture.
  • Use ground turkey or chicken as a leaner alternative to ground beef.
  • Sweet potatoes can be peeled or left unpeeled based on preference.
  • If you prefer a thicker sauce, simmer the sloppy joe meat a few minutes longer.
  • Pickles and red onions add a nice tangy crunch; consider adding shredded cheese or fresh herbs as additional toppings.
