Description

This Buffalo Chicken recipe features tender, marinated chicken breasts cooked to perfection with a flavorful, spicy Buffalo marinade and a sweet, tangy glaze. Perfect for serving as a main dish, in sandwiches, wraps, or salads, the recipe allows customization of heat levels by adjusting the glaze amount. Ideal for a quick weeknight dinner with stovetop or grilling options.

Ingredients

Scale

Chicken

  • 2-3 chicken breasts pounded thin (approx. 1 pound)
  • 3 tablespoons olive oil, divided

Buffalo Marinade

  • 1/4 cup Frank’s hot WINGS Sauce for more heat OR Frank’s ORIGINAL Hot Sauce for less heat
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon pepper

Buffalo Glaze

  • Reserved marinade (from Buffalo Marinade)
  • 1 tablespoon honey
  • 1 1/2 teaspoons lime juice

Instructions

  1. Prepare the marinade: Whisk together all Buffalo Marinade ingredients in a medium bowl. Measure out 1/4 cup and combine with 2 tablespoons olive oil in a shallow dish or freezer bag.
  2. Marinate the chicken: Add chicken breasts to the marinade mixture, tossing evenly to coat. Cover and refrigerate for 2 hours up to overnight for best flavor.
  3. Make the glaze: To the remaining marinade, whisk in 1 tablespoon honey and 1 1/2 teaspoons lime juice. Store in the refrigerator until ready to use.
  4. Bring chicken to room temperature: Remove chicken from refrigerator and let sit for 15-30 minutes before cooking to ensure even cooking.
  5. Cook on stovetop: Heat a large non-stick skillet over medium-high heat until very hot. Add chicken and cook undisturbed for 3-5 minutes until browned. Flip chicken, cover, and reduce heat to medium. Cook an additional 5-7 minutes or until fully cooked through. Remove chicken and let rest 5 minutes before slicing.
  6. Optional grilling method: Preheat grill to medium heat (375-450°F) and grease grates. Grill chicken for 5-7 minutes per side until cooked through (internal temperature 160°F). Remove and let rest 5 minutes before slicing.
  7. Apply the glaze: Brush chicken with desired amount of Buffalo Glaze. Adjust glaze quantity for desired heat level—more glaze for spicier flavor, less glaze for milder taste.

Notes

  • Watch the recipe video at the top of the post for a visual guide on how to make the dish.
  • The chicken is flavorful but not very spicy without the glaze; customize heat by adjusting the glaze amount.
  • Try tossing the cooked chicken with your favorite BBQ sauce for a delicious variation.
  • This chicken is versatile and excellent for sandwiches, wraps, salads, tacos, and more.
  • Total time excludes marinating since marinating duration varies by individual preference.
