Description

Bang Bang Chicken Skewers feature tender marinated chicken thighs grilled to perfection and coated with a spicy, tangy, and creamy bang bang sauce made from mayonnaise, Thai chili, and sriracha. This flavorful appetizer or main course is quick to prepare, perfect for a summer barbecue or tasty weeknight meal.

Ingredients

Scale

Chicken

  • 1 ½ pound chicken thighs, cut in 1-inch cubes
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • ½ teaspoon sea salt
  • 1 tablespoon honey
  • 1 tablespoon olive oil

Sauce

  • 1 cup mayonnaise
  • juice of half a lemon
  • ½ cup sweet Thai chili sauce
  • ¼ cup sriracha sauce

Instructions

  1. Prepare the Chicken: Cut the chicken thighs into 1-inch cubes and place them in a bowl. Add paprika, garlic powder, onion powder, black pepper, sea salt, honey, and olive oil. Mix thoroughly to coat the chicken evenly with the spices and honey-oil mixture.
  2. Make the Sauce: In a separate small bowl, combine mayonnaise, lemon juice, sweet Thai chili sauce, and sriracha sauce. Mix well until smooth.
  3. Marinate the Chicken: Pour half of the prepared sauce into the bowl with the chicken. Toss to coat all pieces well. Reserve the remaining half of the sauce for serving and basting.
  4. Skewer the Chicken: Thread the marinated chicken pieces onto skewers. Brush the skewers lightly with some of the sauce left in the marinade bowl to enhance flavor and prevent drying during cooking. Set aside.
  5. Preheat the Grill: Preheat your grill to high heat to ensure a good sear and even cooking.
  6. Grill the Skewers: Place the chicken skewers directly over the flame on the grill. Cook for 15-20 minutes, turning occasionally to cook evenly and baste with additional reserved sauce to keep the chicken moist and flavorful. Grill until the internal temperature reaches 165° F (74° C).
  7. Serve: Transfer the cooked bang bang chicken skewers to a serving plate. Serve hot with the remaining bang bang sauce on the side for dipping.

Notes

  • For a lighter bang bang sauce, use reduced-fat mayonnaise or substitute half of the mayonnaise with Greek yogurt.
  • If wooden skewers are used, soak them in water for at least 30 minutes before grilling to prevent burning.
  • Adjust the amount of sriracha to control the spiciness of the sauce according to your preference.
  • Serve with fresh vegetable sticks or over rice or noodles for a complete meal.
