Ingredients
Scale
Chicken Marinade
- 1 1/2 pounds boneless skinless chicken thighs
- 1 1/4 teaspoons kosher salt
- 3/4 teaspoon black pepper
- 3 garlic cloves, minced
- 1 tablespoon chipotle peppers in adobo sauce
- 1 teaspoon ancho chile powder
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon olive oil
- 1 lime, juiced
Burrito Bowl Toppings
- Rice, for serving (about 3 cups cooked)
- Black beans, for serving (about 1 1/2 cups cooked or canned)
- Shredded lettuce, for serving (about 2 cups)
- Avocado, sliced, for serving (1 medium avocado)
- Salsa, for serving (1 cup)
Instructions
- Prepare the marinade: In a large bowl, combine the chicken thighs with kosher salt, black pepper, minced garlic, chipotle peppers in adobo sauce, ancho chile powder, ground cumin, dried oregano, and olive oil. Toss everything together until the chicken is evenly coated.
- Preheat the air fryer: Place the crisper plate into the air fryer basket. Use the preheat function to heat the air fryer to 385 degrees Fahrenheit, then pause the unit.
- Cook the chicken: Arrange the marinated chicken thighs onto the preheated crisper plate in a single layer. Set the air fryer to the air frying function at 385 degrees Fahrenheit and cook for 16 minutes, flipping halfway through if your air fryer requires.
- Rest and slice the chicken: Once cooked, transfer the chicken to a plate and squeeze fresh lime juice over the top. Let the chicken rest for 5 minutes to retain its juices, then slice it into strips or bite-sized pieces.
- Assemble the burrito bowl: In serving bowls, layer cooked rice, black beans, shredded lettuce, avocado slices, and salsa. Top each bowl with the sliced chipotle chicken. Serve immediately and enjoy!

- Use canned black beans for convenience, rinsed and drained before use.
- To make this dish gluten free, ensure all seasoning and salsa used are gluten free.
- Rice can be white, brown, or Mexican-style rice depending on preference.
- Leftover chicken can be stored in an airtight container in the refrigerator for up to 3 days.
