Instructions

  1. Prepare the watermelon: Cut the watermelon into cubes, discarding the rind and any white parts to ensure only the sweet red flesh is used.
  2. Blend the ingredients: Add the watermelon cubes and lime juice to a blender and blend until smooth. Use a tamper if necessary. If the blender is small, work in batches to blend all the watermelon evenly.
  3. Strain the juice: Pour the blended mixture through a fine-mesh strainer to remove any pulp, then transfer the strained juice into a jug for serving.
  4. Assemble the mocktail: Fill glasses or a large pitcher halfway with crushed ice, pour the watermelon lime juice, then top off with soda water to fill the remaining space.
