Instructions

- Shape the Dough Rolls: Divide the dough and shape it into three rolls, each about 7 inches long. Roll each log in the flaked coconut to coat the outside completely.
- Chill the Dough: Wrap the coconut-coated rolls tightly and chill them in the refrigerator for several hours, preferably 4 hours, to firm up for easier slicing.
- Preheat Oven: When ready to bake, preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
- Slice and Bake: Remove the chilled dough logs from the refrigerator and slice them into 1/4 inch thick slices. Place the slices on an ungreased cookie sheet, leaving enough space between each cookie.
- Bake the Cookies: Bake in the preheated oven for 12 minutes or until the edges turn lightly golden and the cookies are cooked through.
- Cool: Transfer the cookies to wire racks and allow them to cool completely before serving or storing.
