Description

These Reuben Egg Rolls are a crispy and flavorful twist on the classic Reuben sandwich, combining corned beef, Swiss cheese, and sauerkraut wrapped in egg roll wrappers. Perfect as an appetizer or snack, they can be cooked using an air fryer, stovetop frying, or oven baking and served with tangy Thousand Island dressing for dipping.

Egg Rolls

  • 12 egg roll wrappers

  • Thousand Island dressing (for serving)

Instructions

  1. Prepare the Filling: Dice the corned beef into bite-sized pieces and dice or shred the Swiss or mozzarella cheese. In a medium bowl, combine the corned beef, cheese, and sauerkraut. Mix until evenly combined.
  2. Assemble Egg Rolls: Place 1 to 2 tablespoons of the filling in the center of each egg roll wrapper. Dip your finger in water and moisten the edges of the wrapper. Fold in two opposite corners towards the center, then tightly roll up the wrapper to enclose the filling. Repeat with remaining wrappers.
  3. Air Fry Cooking Method: Brush both sides of the egg rolls with oil. Preheat the air fryer to 400°F and cook the egg rolls for 10 minutes or until golden brown, turning halfway if needed.
  4. Stovetop Cooking Method: Heat oil in a deep pot over medium heat. Fry the egg rolls in small batches for 5 minutes or until golden brown. Remove and drain on paper towels.
  5. Oven Baking Method: Brush egg rolls with oil on both sides. Place on a foil-lined sheet pan or baking rack. Bake at 400°F for 15 minutes, flipping halfway through and reapplying oil as needed, until golden brown.
  6. Cool and Serve: Allow egg rolls to cool for 2 to 3 minutes before serving to avoid burning from the hot filling. Serve with Thousand Island dressing for dipping and enjoy!
