Description

A refreshing and tropical Pineapple Rum Punch combining pineapple juice, coconut rum, lemon-lime soda, fresh lime juice, and simple syrup. Perfect for a quick summertime cocktail that's easy to prepare and delightfully flavorful.

  • ⅓ cup coconut rum (Malibu Original recommended)
  • ½ cup lemon-lime soda
  • ⅛ cup fresh lime juice
  • ⅛ cup simple syrup

Instructions

  1. Combine Ingredients: In a cocktail shaker or a large mason jar with a lid, add the pineapple juice, coconut rum, lemon-lime soda, fresh lime juice, and simple syrup. Shake well to combine all the ingredients thoroughly.
  2. Prepare Glasses: Fill 2 low-ball cocktail glasses (12 oz. each) three-quarters full with ice cubes to chill the drink and keep it refreshing.
  3. Serve: Pour half of the cocktail mixture, about 1 cup each, over the ice cubes in each glass, ensuring even distribution.
  4. Garnish: Add a skewer of fresh pineapple pieces on each glass to enhance presentation and add a fruity touch.

Notes

  • Store leftover punch in the refrigerator for up to 24 hours; however, ice will dilute the drink and soda may become flat.
  • You can substitute coconut rum with white/clear rum or spiced rum depending on your preference.
  • Mini 6 oz. cans of pineapple juice are convenient for this recipe and help avoid opening large bottles.
  • This recipe can easily be doubled or tripled for larger gatherings.
  • Add ice only just before serving to prevent the punch from becoming watered down.
  • Lemon-lime soda can be swapped with ginger ale or lemon-lime sparkling water for variation.
