Description

These Marinated Portobello Mushroom Burgers offer a delicious and hearty vegetarian alternative to traditional beef burgers. Marinated in a flavorful blend of olive oil, soy sauce, apple cider vinegar, brown sugar, and spices, the mushrooms become tender and richly savory. Perfectly grilled and served on fresh buns with optional toppings like mayonnaise, tomato, onion, and spring mix, these burgers are a quick and satisfying meal for any occasion.

Ingredients

Scale

Marinade

  • 2 Tbsp olive oil
  • 2 Tbsp soy sauce
  • 1 Tbsp apple cider vinegar
  • 1 tsp brown sugar
  • 1/4 tsp oregano
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 tsp smoked paprika
  • Freshly cracked pepper (about 10 cranks)

Main Ingredients

  • 2 portobello mushroom caps (about 1/2 lb total)
  • 2 buns

Optional Toppings

  • 1 cup spring mix
  • 1 tomato, sliced
  • 1/4 red onion, sliced into rings
  • 4 Tbsp mayonnaise

Instructions

  1. Prepare the Marinade: In a small bowl, stir together olive oil, soy sauce, apple cider vinegar, brown sugar, oregano, garlic powder, onion powder, smoked paprika, and freshly cracked pepper to form a flavorful marinade.
  2. Marinate Mushrooms: Remove the stems from the portobello mushrooms and place them gill side up in a shallow dish. Pour some marinade into the gills, flip the mushrooms, and pour the remaining marinade over the other side. Let them marinate for 30 minutes, flipping occasionally to ensure even absorption.
  3. Preheat the Grill: Heat a grill or grill pan over medium to medium-high heat until hot and ready for cooking.
  4. Cook the Mushrooms: Place the marinated mushrooms on the grill and cook for about 7 minutes per side, or until they become soft and release most of their liquid. This enhances the texture and flavor.
  5. Assemble the Burgers: Place the grilled mushrooms on buns and add your preferred toppings such as mayonnaise, sliced tomato, onion rings, and spring mix. Serve immediately while warm and juicy.

Notes

  • You can save the mushroom stems to chop and add to an omelette or freeze with other vegetable scraps for making vegetable stock.
  • For extra flavor, consider lightly toasting the buns before assembling the burgers.
  • Adjust the amount of marinade ingredients to taste, especially if preparing larger quantities.
  • If a grill is not available, a grill pan or skillet works well to achieve similar results.
