Instructions

  1. Prepare Carrots: Peel and dice the carrots, then cut them diagonally into pieces about 1 to 1.5 inches long. If carrots are thick, slice them in half to ensure even cooking.
  2. Make the Glaze: In a mixing bowl, combine the honey, minced garlic, melted butter or ghee, olive oil, cinnamon, ground ginger, salt, and black pepper. Toss the sliced carrots thoroughly in this mixture to coat them evenly.
  3. Roast Carrots: Preheat your oven to 425°F (220°C). Spread the coated carrots evenly on a sheet pan. Roast for 25 minutes, tossing halfway through to ensure even cooking. Optionally, broil for 2 to 3 minutes at the end to achieve caramelized, browned edges.
