Description

A refreshing Honey Ginger Lemonade made with a homemade honey ginger simple syrup, freshly squeezed lemon juice, and fresh mint leaves. Perfect for a cooling drink on a warm day with a natural sweetness and spicy kick from the ginger.

Honey Ginger Simple Syrup

  • 1/3 cup honey
  • 1 cup water
  • 1 medium piece fresh ginger, peeled and sliced

Lemonade

  • 1 1/2 cups freshly squeezed lemon juice (preferably Meyer lemons)
  • 4 cups water
  • Fresh mint leaves


Instructions

  1. Make the honey ginger simple syrup: In a small pot or tea kettle, bring 1 cup of water to a boil. Once boiling, turn the heat off and add the honey and sliced ginger. Let the mixture steep for 20 minutes to infuse the flavors.
  2. Prepare the lemonade base: While the syrup is steeping, juice the lemons and pour the juice into a large pitcher. Add 4 cups of water and ice to the pitcher to chill the lemonade.
  3. Combine and strain: After the syrup has steeped for 20 minutes, strain out the ginger slices. Pour the honey ginger syrup into the pitcher with the lemon juice and water. Mix everything well.
  4. Add fresh mint and serve: Add fresh mint leaves to the pitcher for garnish and added aroma. Refrigerate the lemonade or serve immediately over ice for a refreshing drink.

Notes

  • Use Meyer lemons if available for a sweeter, less acidic lemonade.
  • Adjust the sweetness by adding more or less honey according to your taste.
  • For a stronger ginger flavor, allow the ginger to steep longer or add extra slices.
  • Fresh mint leaves can be muddled slightly to release more flavor if desired.
  • Serve chilled for best refreshment.
