Description

  • 3/4 cup water
  • 3 egg whites

Instructions

  1. Prepare baking sheets: Line 3 baking sheets with wax paper and set aside for placing the divinity candy later.
  2. Make sugar syrup: In a 3.5 quart saucepan fitted with a candy thermometer, whisk together sugar, corn syrup, and water. Heat over medium heat stirring occasionally until the sugar dissolves. Then increase heat to high and stop stirring. Cook until the candy thermometer reads 250 degrees Fahrenheit.
  3. Beat egg whites: While syrup heats, beat the egg whites in a stand mixer until stiff peaks form.
  4. Combine syrup and egg whites: Slowly and carefully stream the hot syrup into the beating egg whites over about 2 minutes while the mixer runs continuously to incorporate properly.
  5. Add vanilla extract: Stir in 1 teaspoon pure vanilla extract once the syrup is fully incorporated.
  6. Mix until set: Continue mixing on medium speed for 15 to 20 minutes until the mixture loses its shine and holds its shape when spooned. If both the mixer and candy mixture become hot, turn off mixer and let rest 2 to 3 minutes every 5 minutes to cool.
  7. Spoon onto baking sheets: Using two spoons sprayed with nonstick cooking spray, quickly scoop and scrape the divinity mixture onto waxed paper. Smooth the top by swirling gently. Optionally top with pecans.
  8. Let candy set: Allow the divinity to set for about 1 hour at room temperature until firm.
  9. Serve or store: Serve immediately or store in an airtight container for up to two weeks.

  • You can use a cookie scoop sprayed with nonstick cooking spray to speed up portioning and create uniform pieces, though it won't create as smooth a finish as spoons.
