Instructions

  1. Prepare Cheese Balls: Line a large plate with parchment paper. Using a 1-ounce cookie scoop (2 tablespoons), scoop out balls of cheese and place them on the parchment-lined plate. Freeze for 20 minutes to firm up the cheese balls for easier rolling.
  2. Prepare Coating Plates: Place the finely chopped roasted pistachios and chopped dried cranberries each on separate small plates or shallow bowls for coating.
  3. Roll Truffles: Remove the cheese balls from the freezer. Using your hands, roll each scooped cheese portion into a smooth round ball. Roll half of the balls in chopped pistachios and the other half in chopped dried cranberries until they are completely coated.
  4. Serve and Garnish: Arrange the coated truffles on a serving platter. Optionally, decorate the platter’s rim with rosemary sprigs for a festive touch. Serve immediately or refrigerate until ready to serve.
