Tomato Basil Topping

Chicken

  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 4 slices mozzarella cheese
  • 4-5 tablespoons balsamic glaze

Instructions

  1. Prepare the Tomato Basil Topping: In a medium sized bowl, combine the diced tomatoes, minced garlic, olive oil, balsamic vinegar, chopped basil, salt, and black pepper. Stir well to combine and set aside to allow the flavors to meld.
  2. Prep the Chicken: Prepare the chicken breasts by pounding them to an even thickness if desired, or leave them whole. Coat each chicken breast with olive oil to help the seasoning stick.
  3. Season the Chicken: In a small bowl, mix together the Italian seasoning, garlic powder, salt, and black pepper. Evenly coat each chicken breast with the seasoning mixture.
  4. Grill the Chicken: Heat your grill to high heat. Place the chicken breasts on the grill and cook each side for 8 minutes until cooked through and juices run clear.
  5. Melt the Cheese: Once the chicken is cooked, place a slice of mozzarella cheese on top of each piece. Allow the cheese to melt while the chicken remains on the grill or covered for 1-2 minutes.
  6. Rest and Serve: Remove the chicken breasts from the grill and let them rest for 5 minutes. Top each breast with a generous spoonful of the tomato basil topping and drizzle with balsamic glaze. Serve immediately.
