Description

Chicken and Coating

  • 1 1/2 pounds boneless skinless chicken cut into 1-inch pieces
  • 1 large egg
  • 1/4 teaspoon garlic salt
  • 1/2 teaspoon paprika
  • 1 cup cornstarch

Frying

  • 1/3 cup vegetable oil for frying

Sauce

  • 1 cup sweet chili sauce or homemade

Instructions

  1. Prepare the chicken: Place 1 ½ pounds boneless skinless chicken pieces into a large bowl. Season the chicken with ¼ teaspoon garlic salt and ½ teaspoon paprika. Crack 1 large egg on top of the chicken and massage it in with your hand to coat the chicken evenly.
  2. Coat with cornstarch: Transfer the chicken to a large Ziplock bag. Add 1 cup cornstarch to the bag and seal it. Shake the bag to coat the chicken pieces well and evenly with the cornstarch.
  3. Fry the chicken: In a medium-sized skillet over medium-high heat, add ⅓ cup vegetable oil. Once hot, add the coated chicken pieces in batches if needed to avoid overcrowding. Cook for 7-8 minutes, turning occasionally, or until the chicken is cooked through and golden brown on all sides.
  4. Toss in sauce: Pour 1 cup sweet chili sauce into the skillet over the cooked chicken. Toss well to coat all pieces evenly with the sticky, sweet chili sauce.
  5. Serve: Garnish with diced green onion if desired. Serve the sweet chili chicken hot over steamed rice and enjoy your flavorful weeknight meal.
