Instructions

  1. Cook the bacon: Heat a large pan on medium heat and add the sliced bacon. Cook until crispy, about 6 to 8 minutes, then remove the bacon pieces to a paper towel-lined plate to drain. Leave about 2 tablespoons of bacon grease in the pan, discarding the rest.
  2. Sauté the onion: Add the diced onion to the bacon grease in the pan and cook for 2 to 3 minutes, or until translucent and slightly softened.
  3. Add garlic and seasonings: Stir in the minced garlic, stone ground mustard, smoked paprika, kosher salt, and freshly ground black pepper. Mix well to combine all flavors.
  4. Cook the cabbage: Place the sliced cabbage on top of the onion mixture. Use a large spoon or tongs to stir and sauté everything together for 12 to 15 minutes, allowing the cabbage to become buttery soft and slightly caramelized.
  5. Combine and serve: Return the crispy bacon pieces to the pan and stir everything together evenly. Cook for an additional minute to meld the flavors, then serve warm.
