Apple Filling

  • 3 cups Granny Smith apples peeled, cored and diced

  • 2 tablespoons butter
  • 1 tablespoon cornstarch

Instructions

  1. Prepare Pastry: Cut each sheet of thawed puff pastry into 4 equal pieces and place them on a parchment-lined sheet pan.
  2. Cook Apple Filling: In a pan over medium heat, combine apples, brown sugar, 1/2 teaspoon cinnamon, nutmeg, and ground cloves. Bring to a simmer and cook for 8 minutes until apples are tender. Stir in butter until melted.
  3. Thicken Filling: Whisk cornstarch with 2 tablespoons of cold water, then add to the apple mixture. Cook for 3 minutes, stirring, until filling thickens. Remove from heat and let cool slightly.
  4. Assemble Pies: Spoon about 2 tablespoons of apple filling onto one side of each puff pastry piece. Brush edges with water and fold over to form a rectangle. Crimp edges with a fork to seal.
  5. Chill Pies: Place assembled pies on a tray and chill in the freezer for 20 minutes to firm up.
  6. Heat Oil: Heat about 3 inches of oil in a deep pot or fryer to 350 degrees Fahrenheit using a frying or candy thermometer.
