These Air Fryer Taquitos are crispy on the outside, cheesy and flavorful on the inside, made quickly with shredded rotisserie chicken and easy-to-find ingredients. Perfect as a snack, appetizer, or main course with a delicious Mexican flair.

- 1 tablespoon olive oil
- ½ cup yellow onion, minced
- 2 cups cooked, shredded chicken
- 4 ounce can diced green chilies
- 1 tablespoon fresh chopped cilantro
- 2 tablespoons taco seasoning
- 2 cups pepper jack cheese, shredded
Taquitos
- 12 six-inch flour tortillas (fajita size)
- Nonstick cooking spray
Instructions
- Heat the onion: Heat the olive oil in a large skillet over medium-high heat. Add the minced onion and cook for about 4 minutes until softened and fragrant.
- Prepare filling: Add the shredded chicken, diced green chilies, chopped cilantro, and taco seasoning to the skillet. Stir everything together and cook for 2-3 minutes until heated through.
- Add cheese: Remove the skillet from heat and stir in the shredded pepper jack cheese until well combined.
- Warm tortillas: Stack the flour tortillas, wrap them in damp paper towels, and microwave for 60 seconds to make them pliable for rolling.
- Assemble taquitos: Place 3-4 tablespoons of the chicken and cheese mixture in the center of each tortilla. Roll up tightly, sealing the filling inside. Repeat for all tortillas.
- Preheat air fryer: Preheat your air fryer to 400°F.
- Arrange taquitos: Place the rolled taquitos seam-side down in the air fryer basket, making sure to leave space around each to allow air circulation.
- Cook first side: Spray the taquitos lightly with nonstick cooking spray. Cook at 400°F for 4-5 minutes until golden and crisp.
- Flip and finish cooking: Open the air fryer, carefully flip each taquito using tongs, spray again with cooking spray, and cook another 4-5 minutes until crispy on all sides.
- Serve: Remove all taquitos from the air fryer and serve hot with your favorite dips such as salsa, sour cream, chipotle sauce, or guacamole.
Notes
- Ensure taquitos are rolled tightly to prevent them from unrolling during cooking.
- If taquitos are not crispy enough, cook additional 1-2 minutes per side in the air fryer and remember to spray with cooking spray for the best crispiness.
- Oven alternative: Preheat oven to 425°F (use convection if available), bake taquitos on a foil-lined baking sheet, spraying with cooking spray for 6-7 minutes per side until golden brown.
- For gluten free, substitute flour tortillas with corn or certified gluten free tortillas.
- Spice it up by using hot green chilies or adding minced jalapeño or serrano peppers when cooking onions, or add hot sauce to the filling.
- You can substitute chicken with beef, chorizo, or beans with cheese for different variations.
- Prepare taquitos ahead of time, store unbaked in the fridge for up to 3 days or freezer for up to 3 months.
