Instructions

  1. Preheat and prepare pan: Preheat oven to 350° F and grease a 13×9 inch baking pan thoroughly.
  2. Make the base layer: In a large mixing bowl, combine the red velvet cake mix, melted butter, and egg. Blend together well using an electric mixer until fully incorporated to create a cookie-like batter.
  3. Bake base layer: Pour the batter evenly into the prepared baking pan and spread smooth. Bake for 15 minutes, then remove from oven and allow to cool completely for 30 minutes.
  4. Prepare cream cheese layer: In a medium bowl, beat cream cheese and confectioners sugar together until smooth. Add ¼ cup milk and mix well. Stir in 8 ounces of whipped topping and the crushed peppermint candies until evenly combined.
  5. Assemble cream cheese layer: Spread the cream cheese mixture evenly over the cooled red velvet base. Refrigerate for 30 minutes to set.
  6. Prepare pudding layer: In a large bowl, whisk together the remaining 2 ½ cups milk and both vanilla instant pudding mixes until thickened. Add green gel food coloring gradually, starting with 5-6 drops, until desired color is achieved.
