Description

Celebrate the holidays with this festive Christmas Poke Cake featuring alternating layers of strawberry and lime jello soaked into a moist white cake, topped with creamy vanilla pudding and whipped topping, and adorned with red and green sprinkles for a delightful seasonal treat.

Ingredients

Scale

Cake

  • 1 (15 oz) box white cake mix, plus ingredients called for on box

Jello

  • 1 (6 oz) box strawberry jello
  • 1 (6 oz) box lime jello
  • 2 cups boiling water

Topping

  • 1 (3.4 oz) box instant vanilla pudding mix
  • 1 cup milk
  • 1 (8 oz) container frozen whipped topping, thawed

Decorations

  • Red and green sprinkles or decorations

Instructions

  1. Preheat and prepare pan: Preheat oven to 350°F or temperature indicated on cake mix packaging. Grease a 9x13-inch baking dish with butter or nonstick spray and set aside.
  2. Mix and bake cake: In a mixing bowl, combine white cake mix with ingredients called for on the package. Pour batter into the prepared baking dish and bake according to package directions, about 30 minutes until a toothpick inserted in the center comes out clean.
  3. Cool and poke holes: Remove cake from oven and let cool for 15 minutes. Using a fork or the handle of a wooden spoon, poke holes evenly across the cake about 1 inch apart. Allow cake to cool further while preparing jello.
  4. Prepare jello: In two separate bowls, dissolve each box of strawberry and lime jello with 1 cup of boiling water respectively, stirring until completely dissolved.
  5. Pour jello over cake: Alternate pouring strawberry and lime jello in rows over the cake, ensuring the liquid sinks into the holes. You may not use all of the jello mixture.
  6. Chill cake with jello: Place the cake in the refrigerator to chill for about 15 minutes, allowing the jello to set within the holes.
  7. Prepare topping: Whisk together the instant vanilla pudding mix and milk until thickened. Gently fold in the thawed whipped topping until smooth and creamy.
  8. Apply topping and chill: Spread the pudding-whipped topping mixture evenly over the chilled cake. Refrigerate for an additional 2 hours to fully set.
  9. Decorate and serve: Before serving, sprinkle red and green sprinkles or decorations evenly over the top for a festive finish. Slice and enjoy your Christmas Poke Cake!

Notes

  • Use a toothpick to check cake doneness if unsure.
  • You can substitute any flavors of jello for different holiday themes.
  • For a stronger jello flavor, let the cake with jello soak overnight.
  • Frozen whipped topping should be thawed completely before folding.
  • For best results, ensure cake is cooled to allow jello to penetrate properly.
