Description

A comforting and cheesy potato casserole with a crispy corn flake topping, perfect as a hearty side dish for any meal.

  • 1/4 cup butter
  • 4 green onions, chopped
  • 1 cup sour cream
  • 10 oz can cream of chicken soup
  • 2 cups sharp cheddar cheese, shredded
  • 6 cups frozen shredded potatoes (about 26-28 oz bag)

Topping

  • 1/2 cup butter, melted
  • 3 cups corn flakes, lightly crushed


Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to get it ready for baking the casserole.
  2. Sauté Onions: In a saucepan, melt 1/4 cup butter over medium heat and sauté the chopped green onions for about 3 minutes until they are soft and fragrant.
  3. Add Creamy Ingredients: Stir in the sour cream and cream of chicken soup, mixing until the mixture is combined and starts to bubble gently.
  4. Melt Cheese: Add the shredded cheddar cheese to the mixture and stir until the cheese melts completely creating a creamy base.
  5. Combine Potatoes: Remove the saucepan from heat and fold in the frozen shredded potatoes, stirring well to coat all the potatoes evenly with the creamy mixture.
  6. Prepare Casserole Dish: Lightly grease a 9x13 inch casserole dish and pour the potato mixture evenly into it.
  7. Make Topping: In a separate bowl, mix the crushed corn flakes with the melted 1/2 cup butter until the flakes are well coated.
  8. Add Topping: Spread the buttered corn flakes evenly over the surface of the potato mixture in the casserole dish.
  9. Bake: Place the casserole in the preheated oven and bake for 45 minutes or until the top is golden and crispy and the center is hot and bubbly.

Notes

  • You can substitute frozen shredded potatoes with freshly shredded potatoes to reduce baking time to 30 minutes.
  • To freeze the casserole, assemble all components except the corn flake topping. Freeze before baking. When ready to bake, add the topping and increase baking time until hot and bubbly.
  • Make sure to use sharp cheddar cheese for a more flavorful dish.
