Instructions

  1. Preheat Broiler: Preheat your oven to broil, so it will be ready to melt and brown the cheese at the end.
  2. Cook Turkey: Heat a 12-inch skillet over medium-high heat and add the olive oil, swirling to coat the pan. Add the ground turkey and crumble it with a spatula as it cooks.
  3. Sauté Vegetables: Push the cooked turkey to one side of the skillet and add the diced onion and red bell pepper. Sprinkle the salt, pepper, chili powder, cumin, garlic powder, and smoked paprika over the veggies and turkey. Sauté the vegetables and continue crumbling and cooking the turkey until it is fully cooked through and the vegetables are softened.
  4. Add Remaining Ingredients: Stir in the black beans, frozen corn, diced green chiles, chopped cilantro, and salsa. Mix everything well and heat through until bubbling.
  5. Top and Broil: Evenly distribute the tortilla chips on top of the skillet mixture, then sprinkle the shredded Colby Jack cheese over everything. Place the skillet under the broiler until the cheese is melted and lightly browned, about 3-5 minutes. Keep a close eye to prevent burning.
  6. Serve: Remove from the oven, garnish with additional chopped cilantro if desired, and serve immediately.
