Description

Crispy mini fillo shells filled with creamy pimento cheese, topped with savory bacon crumbles and a drizzle of sweet green pepper jelly. These Bacon Pimento Cheese Bites are perfect warm appetizers for any gathering, combining rich flavors with a delightful texture in a bite-sized treat.

Ingredients

Scale

Appetizer Components

  • 2 (1.9-ounce) (15-count) mini fillo shells
  • 1 (3.5-ounce) package chopped real bacon pieces
  • 3/4 cup prepared pimento cheese (I like Palmetto Cheese brand)
  • 1/2 cup mild green pepper jelly (melted)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F to prepare for baking the appetizers.
  2. Fill Shells: Spoon 1 teaspoon of pimento cheese into each mini fillo shell, distributing evenly among all shells.
  3. Add Toppings: Drizzle about 1/2 teaspoon of melted green pepper jelly over the pimento cheese in each shell, then sprinkle approximately 1 teaspoon of chopped bacon pieces evenly on top.
  4. Bake: Place the filled shells on a baking sheet and bake in the preheated oven for 8 minutes until the cheese is warm and the bacon bits are slightly crisped.
  5. Serve Warm: Remove from oven and serve the Bacon Pimento Cheese Bites immediately while warm for best flavor and texture.

Notes

  • For a spicier kick, use a hot pepper jelly instead of mild.
  • If mini fillo shells are unavailable, small phyllo cups or wonton wrappers can be used as a substitute.
  • Make sure to melt the pepper jelly before drizzling for easier application.
  • These bites are best served fresh but can be reheated briefly in the oven to restore crispness.
  • To make ahead, assemble without baking and refrigerate until ready to bake.
