Appetizer Components
- 2 (1.9-ounce) (15-count) mini fillo shells
- 1 (3.5-ounce) package chopped real bacon pieces
- 3/4 cup prepared pimento cheese (I like Palmetto Cheese brand)
- 1/2 cup mild green pepper jelly (melted)
Instructions
- Preheat Oven: Preheat your oven to 350°F to prepare for baking the appetizers.
- Fill Shells: Spoon 1 teaspoon of pimento cheese into each mini fillo shell, distributing evenly among all shells.
- Add Toppings: Drizzle about 1/2 teaspoon of melted green pepper jelly over the pimento cheese in each shell, then sprinkle approximately 1 teaspoon of chopped bacon pieces evenly on top.
- Bake: Place the filled shells on a baking sheet and bake in the preheated oven for 8 minutes until the cheese is warm and the bacon bits are slightly crisped.
- Serve Warm: Remove from oven and serve the Bacon Pimento Cheese Bites immediately while warm for best flavor and texture.
Notes
- For a spicier kick, use a hot pepper jelly instead of mild.
- If mini fillo shells are unavailable, small phyllo cups or wonton wrappers can be used as a substitute.
- Make sure to melt the pepper jelly before drizzling for easier application.
- These bites are best served fresh but can be reheated briefly in the oven to restore crispness.
- To make ahead, assemble without baking and refrigerate until ready to bake.
